Scone based pizza

This is super easy and not to mention quick to create, as we don’t use yeast in the base it cuts out a lot of time as you don’t have to wait for the dough to rise.  Have a family pizza night and get everyone to add the toppings of their liking.

Ingredients

Pizza Base

  • 250g all-purpose flour,
  • 1 and 1/2 teaspoons baking powder
  • 50g cold butter
  • 7 tbsp milk
  • pinch of salt

Sauce

  • 5 tbsp
  • 1 clove crushed garlic
  • 1/2 tsp dried basil

Toppings suggestions 

  • fresh basil, mozzarella, and tomatoes
  • smoked chicken, cranberry and brie
  • eggplant, olive and caper
  • chorizo, tomato and olive
  • pesto and roast vegetable

Preheat the Oven to 200 C.

In a bowl, sieve together the flour, baking powder, and salt and ensure they are evenly combined.  Add the cold butter and rub the mixture together with your fingers until you have a fine breadcrumb like mixture.

Add the milk 1 tbsp at a time until you have a dough that comes together but isn’t wet and sticky.  You may need a little more or less milk than listed depending on factors such as the humidity and temperature where you are.  Roll out the dough so that it is approximately 1/4 inch thick.  Lay the base on a lightly floured baking tray and bake for 5 minutes.

While the base is baking prep your toppings and make the sauce by combining the three ingredients together in a small bowl.

Smear the sauce on the base then add the toppings of your choice.  Place the pizza in the oven and continue to cook for 10 minutes or until the base is cooked the cheese melted.
