Have you heard of Cloud Bread? This light, carbohydrate free alternative to the family loaf is taking meal times by storm, and is a favourite with the health brigade, as it is high in protein, low in calories and gluten free.

With just three basic ingredients, it’s easy to put together, and you can add whatever you like to jazz it up a little.

You will need:
3 eggs
1/4 cup mascarpone cheese, cottage or cream cheese, at room temperature
1/4 teaspoon baking powder

Pre-heat your oven to 150C. Separate the eggs. Using an electric mixer, beat the egg yolks and cheese until you get a nice smooth dough. In another bowl, beat the egg whites with the baking powder. Using a spatula, gently mix the two together.

Line a baking sheet with non-stick paper. Place portions of the dough in small circles. Bake for about 15 to 20 minutes, until the breads have turned golden. Once cooled, you can opt to store them in a plastic bag until the next day so they soften. You can also freeze them for later or pop them in the toaster, if using immediately.

You can use cloud bread as a pizza base, as hamburger buns, in place of pancakes or english muffins, for sandwiches or as an accompaniment to soup. For a savoury version flavours, add parmesan, rosemary, garlic, salt, pepper etc., or cocoa powder, cinnamon or maple syrup for a sweet version.
