Lemon Sponge Pie:
1 unbaked pie shell, 1cup sugar, 2 Tblspns flour, Juice and rind of 1 lemon, 2 eggs, seperated, 1 Tblspn Butter, 1 cup milk.
Cream the butter and sugar and mix in the flour. Add the egg yolks to milk, mixing well and add slowly to dry ingredients. Add lemom juice and rind and well beaten eggs whites. Pour into unbaked pie shell. Bake @ 180 oC 20-25 mins.

Tangy Lemon Slice:
200 gr Butter, 1/4 cup Golden Syrup, 1/2 cup Sultanas, 1 1/4 cups flour, 1 tspn baking Powder, 1 cup coconut, 1/2 cup sugar, 1 1/4 cups crushed cornflakes. Lemon Icing.
Melt butter and golden syrup in a saucepan large enough to mix all the ingredients. Remove from heat. Add sultanas. Sift in flour and baking powder into saucepan. Add coconut, sugar and cornflakes, mix well to combine. Press mixture into a greased sponge roll tin. Bake @189 oC for 20 mins. or untill golden. Chilled Lemon Cream. ( 6-8 Ramkins)
600 ml cream, 2/3 cup castor sugar, 100 ml strained lemon Juice. Fresh Berries.
Bring cream and sugar slowly to the boil in a saucepan, stirring untill sugar has dissolved. Reduce to a simmer and cook 3 mins. Take off heat and add Lemon Juice. Pour into 6-8 ramekins ( or pretty cups ) and chill untill set. Nice served with raspberries or other fresh berries decoration the top.#789713BJB September 3, 2012 at 2:37 pm
Lemon Chicken: serves 4.
1 kg chicken pieces, 2 Tblspns Lemon Juice.
Remove the skin and all visable fat from the chicken. Sprinkle with the Lemon Juice and cover with foil. Bake @ 180 oC 30- 35 mins or untill the chicken is tender. Serve with Lemon Sauce.
1 Tblspn margarine, 1 Tblspn flour, 3/4 cup chicken stock or white wine, 1 Tblspn lemon juice, 1 Tblspn brown sugar, 1 Tblspn chopped chives, feshly ground black pepper.
Melt the margy in a small saucepan and stir in the flour. Gradually add the chicken/wine, lemon juice and brown sugar. Heat gently stirring continously for 3/4 minutes or untill the sauce thickens. season with black pepper.#789715Dutchy15811MemberMember since: July 30, 2007

1 cup water, 1 cup sugar, 1 Tblspn butter, 1 tspn zest, 2 Tblspns custard Powder, 1 cup Grapefruit Juice.
Put sugar, butter, water and zest in a saucepan and simmer 5 mins, Mix custard powder to a paste with grapefruit juice and mix into liquid, return to lowish heat and cook for a few minutes.

125 grams butter, 1 cup flour, 1/2 tspn baking powder, 1/2 cup icing sugar.
Place in food processor and run untill it clumps together. Use floured hands, press in a flan dish. Refridgerate for 30 mins.
1 cup castor sugar, 1/2 cup lemon juice, grated rind of 1 lemon, 2 Tblspns custard powder, 3 eggs, icing sugar to dust.
Place all the ingredients into food processor ( or use your hand beater ), to mix well to combine. Pour into flan base.
Bake for 25 minutes @ 180 oC untill pastry is crisp and golden and filling is set. Dust with icing sugar.#789723BJB September 28, 2012 at 12:38 pm
Marinade Pork Chops. serves 4.
1 cup Orange Juice, 1 Tblspn Brown Sugar, 1 or 2 tspns ground ginger.
4 Pork Chops.
Pour liquid over chops. and marinade for about 3 hours, more or less.

Lemon Coconut cake:
1 1/2 cup SR Flour, 1/2 coconut, 1 Tblspn Leomon Rind, 125 melted Butter, 1 cup sugar, 1 cup milk, 2 eggs.
Mix altogether, mixing well with an Electric Beater, ’till smooth. Bake @180 oC for 40 mins. When cool, ice with lemon icing.
