Ingredients:
4 Tablespoons Oil
2 Large Onions
3 Tablespoons Brown Sugar
1/2 teaspoon Black Pepper
1 Cup Water
1/2 Cup Chopped Spring Onions
6 Rasher Bacon
2 teaspoons Salt
2 Tablespoons Flour
1 teaspoon Mustard
1/2 Cup White Vinegar
Method:
Boil Potatoes in salted water till potatoes are tender but still firm.
While Potatoes are cooking, prepare bacon, onions and dressing.
Remove bacon rinds. Heat oil in a frying pan and cook bacon until crisp. Lift out and drain, let cool and crumble into dish.
Chop Onions and cook in frying pan. Cook until onion is clear in colour.
Combine flour, sugar, salt, pepper, mustard, water and vinegar together. Stir into frypan. with onion and cook until thickens (May need to add extra water).
Cut potatoes into cubes and place in serving dish.
Sprinkle with chopped onions and pour potato mixture.
Blend lightly with spoons. Serve hot.
