A Few Easy and Delicious Recipes for the Elderly

This article will explore some recipes especially suited to elderly people with diet and appetite in mind. Included in this article will be a variety of recipes for each meal.

  • Breakfast is one of the most important meals of the day, no matter what age you are. It gets the body ready for the day, and sharpens your mental functions. There is something to be said for the old saying, "You can't think on an empty stomach."


Oatmeal with Fruit

1 cup Quick Oats 
1 3/4 cup water
1/8 tsp salt
1/8 cup honey(more to taste)
1/4 milk
fresh peach slices or 
sliced strawberries

Bring water and salt to boil. Add oats, stirring occasionally, for 1 minute over medium heat.
Remove from heat. Add milk and honey. Next add peach slices or strawberry slices. Serves 2.

Scrambled Eggs with Ham

4 large eggs
1/2 cup diced ham 
4 Tblsp shredded cheese
1 tsp oil or cooking spray
salt and pepper to taste (optional)

Whisk eggs in bowl till frothy, add diced ham and seasoning. Heat oil in a small skillet over medium heat. Then add egg mixture, stirring to prevent sticking. Just before removing from the pan, sprinkle cheese on top. Serves 2.


  • Lunch should be colorful and pick up your appetite. (Some of these recipes serve more if you have guests)


Egg Salad Stuffed Tomatoes

6 boiled eggs
1/2 cup chopped celery
1/2 cup salad dressing
3 Tblsp pickle relish
3 Tblsp milk
6 medium tomatoes
6 lettuce leaves

Combine all ingredients except tomatoes and lettuce. Cut each tomato into sixths, cutting through to within 1/2 inch of bottom. Spread out sections slightly. Place tomato on lettuce leaf; top with egg salad mixture. Serves 3-6.

Tuna Macaroni Salad

10 oz can White Tuna
1/4 cup chopped celery
2 Tblsp chopped onion
2 cups cooked elbow macaroni
3/4 cup salad dressing
Salt & pepper to taste
1 hard-boiled egg coarsely chopped

Mix all ingredients and chill for 1/2 an hour. Serves 4-6.


  • Tasty Dinner Ideas 

Hearty Potato Soup

6 medium large potatoes
1 medium onion, finely chopped
1 cup diced ham 
2/3 cup shredded cheese
3 cups chicken broth
1 cup half and half
Peel and dice potatoes and put in medium sauce pan with onions. Then add chicken broth to cover. Bring to a boil and then simmer over medium heat until fork pierces potatoes easily. (15-20 min) Mash potatoes and add the half and half. Stir well and add the ham and shredded cheese, stir occasionally until the cheese melts, add salt and pepper to taste. Serves 3-4.

Baked Cod

2 lbs cod fillets
4-6 oz melted butter
salt, pepper to taste
dash paprika
1/2 cup shredded Swiss or Cheddar cheese
Rinse and dry fish according to directions. Place in shallow baking dish. Sprinkle with cheese, paprika, salt, and pepper. Bake at 375 degrees for 20 minutes until slightly browned and fish are flaky. Serve with melted butter as dipping sauce. Serves 4-5.

Baked Barbecued Chicken

2 lb chicken wings or legs
3/4 - 1 cup barbecue sauce
1 tsp McCormick Barbecue spice (optional)
Simmer chicken in boiling water or chicken broth for 8-10 minutes. Remove from heat, drain, and pat dry. Place several pieces at a time in a medium size bowl. Add barbecue sauce to chicken and mix to coat well.
Place in shallow baking dish lined with foil for easy cleanup. Bake at 350 degrees for about 30 minutes or until done. Serves 3-4.


These recipes are tasty and fairly easy to prepare, without spending a lot of time in the kitchen, standing over a hot stove. Bon appetite!
