Oh Yum! Jenco, The simplest way I know is to take two squares of ready rolled puff pastry. Prick it all over and bake in the hot oven. Make a thicker than usual one litre of milk with Edmonds Custard Powder, sweetened. Spread over one slice of pastry when at room temperature. Place the other on top and ice with vanilla icing. You can cut the pastry squares to fit into a tin before adding the custard and it does making the cutting easier. But I loved those endy bits.

Ah, you're a woman after my own heart, Joybel. I thought I was the only person who cheated and made custard squares with ready rolled pastry and custard powder. Great minds, eh? ;-)

My old Edmonds book has 175g 6ozs flakey pastry, cut in half and each piece rolled very thin. Prick well all over and bake at 215C 10- 12 mins. The filling is 1 1/2 cups milk, 50g butter, 2tblsp Edmonds Cornflour, 3tblsp icing sugar, 1 egg, vanilla essence.
I cup milk in a saucepan with the butter and heat. Mix cornflour and sugar with the remainder of the milk to a smooth paste and add beaten egg. Pour in hot milk and butter and return to the saucepan; cook until the mixture thickens, then cook for 5mins stirring all the time. Add vanilla and when cold spread between the pastry. Ice the top and sprinkle with cocoanut.

I make a thicker than usual custard too but I spread it over Huntly and Palmer crackers, on the bottom and the top, and ice with passionfruit icing.

Does using crackers really taste like the original, or better nandi? easier I admit. I stopped treating myself to the odd one in the tearooms after reading they were the most bacteria laden food item in Christendom.

Yes, the crackers work well don't they Nandi - wouldn't use pastry any more! So much easier and taste just as good as pastry - if not better!

Really, once you've tasted a Denheath you won't want any other. No, I don't work for them, I just love them. They are delivered in polystyrene
cool packs with little ice packs to keep them fresh.
