Savoury Mince:

1 med onion, peeled and chopped, 1 carrot, peeled and diced,
1 clove garlic, peeled and crushed, 1 stick celery, chopped,
250 grams mince, 1/2 tspn mixed herbs, 1 can tomotoes, pepper to taste.

Gently fry onion and garlic in a lightly oiled saucepan. Add beef. Cook well, stirring occasionally. Mash tomatoes in their juice with a fork. Add tomatoes and remaining ingredients to meat and bring to boil. Reduce heat, cover and cook 35 - 45 mins.

For a thicker consistency, mix a little cornflour with water and stir into mixture.

Chicken Combo:

1 cup chopped, cooked chicken, 1/2 cup cold, cooked rice, 1/2 small cucumber sliced, 1/2 small capsicum, chopped, 1/2 can corn kernels, drained, 1 Tblspn peanut butter, 2 Tblspn vinegar, chopped chives

Combine chicken, rice, cucumber, capsicum and corn. combine peanut butter and vinegar and stir through chicken mixture. Serve chilled, sprinkled generously with chives.

Baked Custard:

1 cup milk, 1 egg, 1/2 tspn sugar, 1/2 tspn vanilla ess., pinch of nutmeg.

Put milk, egg, sugar van ess, into a bowl and beat well. Pour into a small pyrex dish or 2 ramkins, sprinkle mutmeg on top.
Put ramkins into an oven dish, with some water, bake @ 160 oC 20-30 mins or untill a knife inserted, comes out clean.

Tangy Chicken:

2 chicken pieces, 1 small onion, 1 tspn oil, 2 Tblspn lemon juice, 2 tspn lemon rind, 4 Tblspn tomato sauce, 1/2 tspn brown sugar, pinch of dry mustard and curry powder, 2 tspn vinegar, 1 tspn soy sauce.

Place chicken in cassarole dish. Gently fry onion in oil. Add remaining ingredients and bring to boil. Pour over chicken. Bake in oven, 160 oC, for 1 hour.

Fish Fillets in Foil:

Few slices of tomato, 1 fish fillet, crushed garlic, sliced mushrooms, parsley, black pepper.

Arrange ingredients on a piece of foil, wrap up well, bake for about 12-15 mins in oven at 180 oC.


Another:

A fish fillet, crushed garlic clove, rings of red capsicum, Leeks or shallot greens cut into rings.

Cook as above.
