I recently bought some ginger & walnut cookies from a local cafe, which were divine, but understandibly the owner was reluctant to part with the recipe. I suspect that aside from walnuts & ginger, there may also be honey in the mix, but i'm not certain. I'd be interested to hear any members recipes with the 2 main ingredients mentioned above, regardless of whether they produce the exact cookie i've mentioned. Variations & innovations are welcome.biggrin

This may be not quite what you want, but sounds good.

Ginger and walnut slice:

50 grm butter, 1/2 cup brown sugar, 2 Tblspn golden syrup, 1 pkt gingernuts - crushed, 1/4 cup chopped walnuts, 1/4 cup coconut, Icing for slice: 2 cups icing sugar, 2 Tblspn softened butter, 1 Tblspn lemon juice, warm water to mix.

Melt butter, brown sugar, milk and golden syrup in a small saucepan, stirring to dissolve sugar, simmer for 4 mins and then remove from heat.
Combine bicuit crumbs, walnuts and coconut in a bowl and make a well in the centre.
Pour in the sugar mixture and mix well.
Press into a lined slice pan and refridgerate untill set.

Mix together 2nd measure of butter, icing sugar and lemon juice with enough water to make an easily spreadable icing. Ice ginger slice.

Enjoy.

Hi felix56, Here is one with basic biscuit.
500g butter
& 1 cup sugar, beat these two well.
Add 1 can condensed milk,
sift in 5 cups S R flour and mix in above.
Roll into balls...Teaspoon size,
flatten with fork. Now can add Sultanas, cornflakes,choc chips, walnuts, crystalized or ground ginger or cinnamon.
Bake at 180C for 10 to 12 minutes....best of luck.
