Corn Muffins:

50gr melted butter, 1/2 cup creamed corn, 1/2 cup milk or plain yogurt, 1/2 cup grated tasty cheese, 1 1/2 plain or wholemeal flour, 3 tspn baking powder, 1 egg, 1/4 cup sugar.

Grease or spray 12 hole muffin pan. put melted butter into fairly large mixing bowl, add creamed corn and egg and mix with fork. Add milk/yogurt, cheese and mix again. Sift in flour and baking powder and fold in. Do not over mix. Bake 10/15 mins @ 200 o C.

Coffee and Walnut Muffins:

2 Tblspns instant coffee, 1/2 cup hot water, 1/2 cup milk, 1/2 cup melted butter, 1 beaten egg, 1 1/2 cups self raising flour, 1/2 cup walnuts. Dissolve coffee in hot water, add milk.
Sift flour into a basin, add melted butter, coffee/water, milk and egg, sugar and walnuts and mix. Makes 12 muffins. Cook 15/20 mis @ 200 oC.

Comment: Rather a wet mix, maybe a little less liquid would be OK, but I made these as the recipe stated and were fine. Could use plain flour and Baking powder.

Savour Muffin:

2 cups grated cheese, 1 1/2 cups flour, 3 tspn baking powder, 1/2 tspn salt, 1 Tbpsn sugar, 1 cup milk, 1 egg. Sift flour, baking powder, salt into a bowl, add sugar and cheese. Add finely chopped ( med ) onion, 2 slices bacon ( raw ) and a chopped up tomato and add to dry ingredients. Mix lightly. Folk egg and milk together till combined and add to other ingredients. FOLD LIGHTLY. untill just mixed. Put into muffins tins. Cook at 200 oC for 12 - 15 mins

Raspberry and Chocolate Muffins:

2 cups flour, 4 tspns baking powder, 1/2 cup castor sugar, 1 cup frozen raspberries, 1/2 cup chocolate chips, 1 egg lightly beaten, 1 cup milk, 50 grams melted butter.

Sift dry ingredients into a bowl, add sugar and make a well in the centre. Add raspberries, chocolate chips, egg, milk and butter. Lightly fold to combine ingredients, be careful not to over mix.. Spoon into muffin tins and bake 10-15 mins @ 200 oC.

Lemon and Poppyseed Muffins - makes 12

2 cups flour, 4 tspns baking powder, 1/2 tspn ground cinnamon, 1 Tblspn poppy seeds, 1/2 cup brown sugar ( white sugar would be OK too ), 1 Tblspn grated lemon rind, 50 grams soften butter, 2 eggs, 3/4 cup yohurt, 1/4 cup milk.

Topping: 2 Tblspns raw sugar, 1 tspn ground cinnamon.

Sift flour, BP and cinnamon into bowl. Stir in poppy seeds and lemon rind and sugar. Mix well butter, eggs and milk together. Put into dry ingredients, mix just too moisten. 3/4 fill deep muffin tins. Sprinkle topping evenly over batter.

Bake at 200oC for 15-20 minutes.

Apricot Muffins - Makes about 10

1/4 cup chopped dried Apricots, 1/2 cup water, 100 grams butter, 1/2 brown sugar, 1 egg, 1/2 cup milk, 2 cups flour, 4 tspns baking powder.

Place apricots and water into a saucepan large enough to mix all the ingredients. Bring to the boil and cook for 5 minutes. Stir in butter and sugar, mix to melt and then leave to cool. Beat egg and milk together and add to the saucepan, mix well. Add sifted flour and baking powder into the saucepan and mix to just moisten. 3/4 full deep muffin tins. Bake @ 190 oC 15 - 20 min.,.

Rhubarb and Lemon Muffins: Makes about 14

1 cup stewed rhubarb, 2 tspn grated lemon rind, 2 cups flour, 4 tspns baking powder, 3/4 cup sugar, 50 grams butter, 2 eggs, 1 cups milk.

Mix rhubard and lemon rind together. Sift flour and baking powder together into a bowl. Stir in sugar. Melt butter. Beat eggs and milk together. Mix rhubarb, milk mixture and butter together into the dry ingredients to just moisten. 3/4 full deep muffin tins with mixture. Bake @ 200 oC for 15 mins.

Tamarillo Muffins:

1/2 cup sugar, 2 cups flour, 3 tspns baking powder, 1 tspn ground ginger, 1/2 tspn cinnamon, 1/2 tspn nutmeg, 1 egg, lightly beaten, 1/2 milk, 100 gram butter, 3 peeled chopped tamarillo, 1 xtra tamarillo, peeled and sliced. Preheat oven to 180 oC. Lightly grease muffins tins. Place the sugar and sifted flour, BP and spices into a bowl. Combine the egg, milk and melted butter. Add the liquid to the dry ingrents and add the tamarillos, combine quickly, untill just moistened. Spoon into muffin tins. Top with a thin slice of Tamarillo. Bake for 20-25 mins.

Comments: Can be rewarmed in Micro and serves with custard and Ice Cream.
