We're still waiting for the recipe Aggie rolleyes I too enjoy home made tomato soup, there is something about it that really tickles the taste buds. lol

I will do it later today Threadz, I promise, just have to look for it but at the moment, still unshowered etc and the littlies arriving any time. It is on one of those pieces of paper we have with recipes jotted on them and if I am not mistaken I put it in a safe place last time redfaceredface lollol

My Favorite....
Tomato Soup.
2 1/2 lbs ripe toms, core out and quarter...1/2 cup of butter.
1/2 lb of onions, chopped. A stick of celery, chopped.
6 Garlic cloves...1/4 cup of tomato paste...1 bay leaf.
1/2 tbls pepper corns...1 tsp thyme...4 cups of water or milk.
1 tbls butter...1 tsp sea salt and 1/2 tsp white pepper.
METHOD
Melt 1/2 cup of butter, add onions, simmer 5 minutes and add toms,
tom paste, pepper corns, thyme and bay leaf. Simmer 40 minutes.
Blend with blender wand or food proceser. Strain and put back in
stock pot..Add liquid, salt and pepper to taste. Bring to the boil.
Add 1 tbls of butter...........Cheers, Bazza.

OK, drum roll ........ here it is ....

6 kg tomatoes
8 onions
2 cups sugar
1 Tablespoon salt
1 tsp pepper - or less
4 cloves and 1 bay leaf in muslin bag
celery salt if liked'

Skin tomatoes, cook all together till done - an hour?
Mouli
Stir in:
8 Tbs flour mixed with 8 ozs melted butter
Cook gently for 8 minutes.

ENJOY Looks like 8 is just about the magic number here. razz

As I said, over the years I have made many jars of tomato soup, never liked any. Always made spaghetti and tomatoes and one year even grew our own haricot beans for baked beans eek. Nothing, but nothing has ever tasted like this tomato soup. Delicious.

I can only eat acid free or low acid tomatos, but my local Countdown can't seem to get any supplies now. Does anyone know of a store or growers in the Auckland region that has any. I'm growing some at home at the moment, but would be nice to have some available right now from somewhere. Would appreciate any help here.

I suggest you get in touch with Awapuni Nurseries in Auckland and ask their advice of where to get the actual Tomatoes. I find this nursery exceptional for advice on various queries and have no doubt they will help. Let me know how you get on.
