With the whitebait season underway, it’s time to whip up some fresh fritters.
- 1 tbsp flour
- 2 eggs
- 240g fresh whitebait drained and rinsed
- salt and ground black pepper to taste
- 1 teaspoon of fresh parsley
- 3 teaspoons butter to cook in
Whisk eggs, add sieved flour, salt, pepper and herbs. Gently stir in whitebait.
Melt butter in a frypan then drop in teaspoon fulls of fritter mix.
Fry until set then flip and brown the other side.
Best served with beer, bread and butter, and a squeeze of lemon.
