What’s for dinner? Creamy mussels


Mussels are a fantastic form of protein and are fast to prepare.

Try a mussel pot tonight for a tasty and nutritious meal.


  • Steamed Mussels with vegetables in a black frying pan on the coals1 kg mussels
  • 1 can coconut cream
  • 2 tbsp green curry paste
  • 2 gloves garlic, crushed,
  • 1/2 a leek, sliced finely
  • 1 tsp fish sauce
  • 1 tsp brown sugar
  • 1/4 cup chopped basil
  • 1/3 cup chicken or fish stock
  • Vegetable oil


Heat the oil in a large pan and gently fry the leek, curry paste and garlic for a couple of minutes. Add everything else except the mussels and stir until simmering.

Add the mussels and cook until they open (discard any that stay closed).

Serve in a pot with the sauce, along with crusty bread, butter and a salad.
