Mussels are a fantastic form of protein and are fast to prepare.
Try a mussel pot tonight for a tasty and nutritious meal.
- 1 kg mussels
- 1 can coconut cream
- 2 tbsp green curry paste
- 2 gloves garlic, crushed,
- 1/2 a leek, sliced finely
- 1 tsp fish sauce
- 1 tsp brown sugar
- 1/4 cup chopped basil
- 1/3 cup chicken or fish stock
- Vegetable oil
Heat the oil in a large pan and gently fry the leek, curry paste and garlic for a couple of minutes. Add everything else except the mussels and stir until simmering.
Add the mussels and cook until they open (discard any that stay closed).
Serve in a pot with the sauce, along with crusty bread, butter and a salad.
