Spinach and Feta Tart

Ingredients
Tart4 large eggs
1 cup milk
1/2 cup feta
½ small onion thinly sliced
1 clove garlic minced
1 cup fresh spinach (uncooked) chopped
Olive oil
Puff pastry
Salt and pepper to taste

Preparation

1.    Preheat oven to 375 degrees.

2.    Line your pie dish with the puff pastry and add half of the feta and put aside.

3.    Sauté the onion in olive oil on medium/low heat until translucent and soft.

4.    Add the garlic and sauté for one minute.

5.    Add the spinach and sauté until wilted and place this mixture into pie shell, on top of the feta.

6.    In a mixing bowl beat together the eggs and milk. Add salt and pepper to taste

7.    Add the egg mixture to the pie shell and top with the remainder of the feta

8.    Bake for 45 minutes or until a pick inserted in the center comes out clean. The top should be lightly browned. Let cool for at least 10 minutes.
