Spicy almond biscuits

We love these biscuits in my house with a spicy hint from the cinnamon, cloves and nutmeg and a kick from the lemon zest and brandy they will surely be a hit with your family and friends as well.

  • 1 egg
  • 1/3 cup blanched almonds, finely chopped
  • 1/2 cup white sugar
  • 1/2 tbsp ground cinnamon
  • 1/2 tbsp ground cloves
  • 1/2 tbsp ground nutmeg
  • 1/2 tbsp lemon zest
  • 2 tbsp brandy
  • 2 cups (250g) plain flour
  • Preheat oven to 160 degrees C.

Cream the butter until light and fluffy. Add the well beaten egg, almonds, sugar, brandy, spices and flour. Mix until mixture is well combined.

On a lightly floured surface, roll the mixture to 1/2cm thick and cut with round cookie cutters dipped in flour. Place biscuits onto a greaseproof paper lined baking tray.

Bake in preheated oven for 8 to 10 minutes until lightly browned.
