Mini eggplant pizza

A very easy recipe which pleases everyone. Change the toppings to suit your preferences and enjoy the gluten-free pizza goodness.

Ingredients:

  • 1 large or 2 small eggplant (¾-inch thick slices)
  • 2 tbsp. olive oil
  • 2 cloves of garlic, sliced very thin
  • 1 tsp. of each: garlic powder, salt and pepper, oregano
  • ¾ cup pizza sauce
  • 1 cup mini cherry tomatoes, halved
  • ¾ cup grated cheese
  • Basil leaves
  • Cooking oil spray

Method:

Preheat the oven to 200 C. Slice the eggplant between ½ inch thick to ¾ inch thick.

Prep the pan sheet with the cooking oil spray. Place the slices of eggplant on it. Brush the eggplant with olive oil.

Slice the garlic and place a few on each eggplant.

Sprinkle salt and pepper, oregano and garlic powder on each slice (be generous).

Grill in the oven for 30 minutes.

Remove from the oven. Place a tsp. of pizza sauce on each eggplant slices.

Add some cherry tomatoes, then top with grated cheese.

Place in the oven for another 10 minutes until the cheese is grilled.

Decorate with fresh basil. Eat immediately.
