Healthy berry cottage cheese casserole

So good for you, you could have it for breakfast!

 

This is a great dessert for those who are trying to be healthy but can’t imagine life without dessert! The cottage cheese is smooth and creamy and fills you up while the berries give it a bit of oomph. Easy and delicious, it’s a perfect replacement pies and cakes. Try it!

Servings: 6-8 

Children have breakfast cottage cheese casseroleIngredients: 

  • 600g cottage cheese
  • 140g semolina
  • 700g fresh or frozen berries
  • 2 eggs – 1 piece
  • 1 tsp baking soda

Method:

Put the oven on 180 C and prepare a cake tin of 20 x 20 baking dish with s spray of oil.

Mix the cottage cheese with the eggs, baking soda and 1/4 cup semolina. Then spread it into the baking dish and add the berries by poking them into the batter. (I prefer to do this rather than mixing them in with the rest of the ingredients as it keeps the berries intact.)

Sprinkle with the remaining semolina and put in the oven for 20-30 minutes.

Springle with icing sugar and serve. If you like it sweeter you can add a drizzle of honey to the top when serving.
