Egg fried rice for one

This is so much better than takeaway fried rice and is a lot better for you without all the oil that is usually used. Ready in 15 minutes this is the perfect easy meal for one.

Serves 1

Ingredients:

  • 1 egg
  • 1 tablespoon water
  • 1 tsp butter
  • 1 tsp sesame oil (or oil of choice)
  • 1/2 onion, diced
  • 1 cups cooked white rice, cold (1/4 cup rice cooked in 1/2 cup water for 15 minutes)
  • 1 tbsp soy sauce
  • 1 tsp ground black pepper
  • 1/2 grated carrot
  • 1/4 cup chopped cabbage
  • 1/2 cup cooked, diced chicken meat (optional)

Method:

In a small bowl beat egg with water. Melt butter in a large frypan over medium-low heat. Add egg and leave flat for 1 to 2 minutes. Remove from frypan and cut into strips.

Heat oil in the same frypan then add onion and saute until soft. Add rice, soy sauce, pepper, carrot, cabbage and chicken.

Stir fry together for about 5 minutes then stir in egg. Serve hot.
