Easy chocolate self saucing pudding

Self saucing chocolate pudding

The simplest recipes are usually the best and this one is incredibly quick to make as well. If you’re feeling the chill, cosy up on the couch with a serving of this chocolatey pud and all will be well in the world.

Ingredients:

  • 60g butter
  • 1 1/2 cups self-rising flour
  • 1/2 cup sugar
  • 1/4 cup cocoa
  • 3/4 cup milk
  • 2 tsp vanilla essence

Sauce

  • 1/4 cup cocoa
  • 1/2 cup brown sugar
  •  1/4 cup shredded coconut (optional)
  • 2 cups boiling water

Method:

Place butter in a microwave proof dish, melt on high for 1 minute. Stir in sifted flour, cocoa, sugar, milk and vanilla. Stir until smooth.

Sprinkle with sifted cocoa, brown sugar and shredded coconut (if using) on the pudding then pour the boiling water on top.

Cook in the microwave on high for 12 minutes in case it boils over).

Let stand 5 minutes before serving.

Serve with icecream or cream.
