I am sure most of you have enjoyed a muffin at some point. When I had a café years ago muffins were my biggest seller.
I still enjoy making muffins for my families’ lunches and last week I made a really yummy one I thought I might like to share with you. You can use any fruit you wish.

  • 2 cups of flour
  • 1 large teaspoon of baking powder
  • 1 cup of sugar
  • 1 carton of yoghurt (any flavour works)
  • 1 egg
  • 1 nob (2 teaspoons of softened butter)
  • 1/2 cup blueberries or any other fruit
  • Milk to mix.

Method:

  1. Mix all ingredients in a large bowl and spoon into a muffin tray – this makes around 10 good sized muffins.
  2. Bake 10 mins at 200C (I use fan bake).
  3. While muffins are cooling either make a caramel sauce or buy a tin of ready-made caramel.
  4. Take the muffins out and make a hole in the top of each one and drop in a good teaspoon of caramel mixture.
  5. Bake for 10 to 12 mins more or until golden.

These are ever so yummy. I do hope you enjoy making them. I used blueberries when I made them last, but I think I might try stewed apple next time.
