Banana spinach pancakes

Great for children and adults alike, make these pancakes for breakfast, lunch or dinner. As they are full of good wholesome ingredients you’ll feel nourished and satisfied without any guilt.

Spinach banana pancakes with pecans

Ingredients

  • 1 2/3 cup oats
  • 1 medium banana
  • 1 cup spinach
  • 1 cup unsweetened almond milk (or milk of your choice)

Instructions

Add 1 and 1/3 cup oats to a blender and blend into flour.

Add banana, spinach, and almond milk to the blender and blend until everything is mixed.

Add the last 1/3 cup oats (not the oat flour) to the blender and mix for a couple seconds, (it should still be chunky).

Let the pancake mixture sit for 15 minutes so it can thicken.

Heat a nonstick frying pan to on medium heat and spray lightly with oil. Scoop 1/4 cup batter onto the pan. Wait about 2-3 minutes, then flip and cook for another 1-2 minutes.

Serve with sliced banana and pecans if you like a bit of crunch.
