Bacon makes everything better, try this bacon butter on toast or stirred into your pasta, with fish or chicken dishes as an addition to your quiche anything really.
- 120 g butter
- 2 shallots
- 60 g bacon
- 1 tablespoon fresh basil
- 1 teaspoon tomato paste
- Peel and chop the shallots finely. Cut the bacon into small pieces.
- Fry all in 1 tablespoon of butter for about 5 minutes.
- Let cool and blend with the rest of the butter, tomato paste and basil.
- Salt and pepper.
- Form the butter into a roll in parchment paper or store in a small bowl. Put in the fridge for about half an hour to make it more solid.
