    Carrot Health Loaf:
    1 cup Rolled Oats
    ½ cup Carrot (grated)
    1 cup Wholemeal Flour
    1 Tablespoon Golden Syrup
    ½ teaspoon Baking powder
    ½ cup Hot Water
    ½ cup Milk
    Method:
    Mix dry ingredients and stir in grated carrot.

    Dissolve golden syrup in water, cool and add milk.

    Mix all together thoroughly.

    Bake in a loaf tin at 220°C for 45-50mins.

    Wholemeal Banana Bread:

    1/2 cup (125g) unsalted butter, melted
    3 ripe bananas, mashed
    1 tsp vanilla essence
    2 eggs, lightly beaten
    1 cup (200g) brown sugar
    2 cups (300g) wholemeal self-raising flour
    Method

    Preheat oven to 200å¡C (180å¡C fan-forced). Line a loaf pan with baking paper and set aside.
    In a bowl, mix the butter, mashed bananas, vanilla essence, eggs and brown sugar. Fold in flour until just combined.
    Bake for 40 minutes, or until a skewer comes out clean. Leave to cool in the pan for 10 minutes and then cool further on a wire rack.

    Prep time: 10 minutes
    Cook time: 10 minutes
    Servings: 10 muffins
    Muffins:
    Dry Ingredients
    1 cup bran (wheat or oat)
    1 cup wholemeal flour
    1 teaspoon baking powder
    2 tablespoons milk powder
    1/4 cup brown sugar
    1/4 teaspoon mixed spice (cinnamon, nutmeg)

    Wet Ingredients
    1 tablespoon golden syrup
    1 teaspoon baking soda
    1 cup hot water

    Muffins:
    1. Preheat oven to 200°C
    2. Combine dry ingredients and mix
    3. Combine wet ingredients, stir and add to dry ingredients. Gently mix until just combined.
    4. Spoon into muffin tray.
    5. Bake for approximately 10 minutes. You can test if muffins are ready by placing a clean, dry knife into muffin, if it comes out clean, without muffin mix, then muffins are cooked.

    Variations
    Add any of the following to the wet mix.
    1 mashed banana
    1/3 cup sultanas
    1 medium grated apple

    Date Wholemeal Loaf:
    1 ½ cups chopped pitted dates
    ½ cup sugar
    2 tbs margarine
    1 cup water
    1 egg, lightly beaten
    ½ cup self-raising wholemeal flour
    ½ cup self-raising white flour
    1 tsp baking powder

    Method
    Place dates, sugar, margarine, and water in saucepan. Bring to the boil, then reduce heat and simmer for 2 minutes. If you would like to use the microwave, place the dates, sugar, margarine and water in covered glass bowl and microwave on high for 4 minutes. Remove from heat and cool.
    Add the egg and mix well. Stir through sifted flours and baking powder, then place in a lightly greased 14 cm x 21cm loaf tin.
    Bake in moderate
