Carrot Health Loaf:
1 cup Rolled Oats
½ cup Carrot (grated)
1 cup Wholemeal Flour
1 Tablespoon Golden Syrup
½ teaspoon Baking powder
½ cup Hot Water
½ cup Milk
Mix dry ingredients and stir in grated carrot.
Dissolve golden syrup in water, cool and add milk.
Mix all together thoroughly.

Wholemeal Banana Bread:
1/2 cup (125g) unsalted butter, melted
3 ripe bananas, mashed
1 tsp vanilla essence
2 eggs, lightly beaten
1 cup (200g) brown sugar
2 cups (300g) wholemeal self-raising flour
Preheat oven to 200å¡C (180å¡C fan-forced). Line a loaf pan with baking paper and set aside.
In a bowl, mix the butter, mashed bananas, vanilla essence, eggs and brown sugar. Fold in flour until just combined.
Bake for 40 minutes, or until a skewer comes out clean. Leave to cool in the pan for 10 minutes and then cool further on a wire rack.#1728104BJB August 8, 2019 at 8:08 am

Servings: 10 muffins
1 cup bran (wheat or oat)
1 cup wholemeal flour
1 teaspoon baking powder
2 tablespoons milk powder
1/4 cup brown sugar
1/4 teaspoon mixed spice (cinnamon, nutmeg)
1 tablespoon golden syrup
1 teaspoon baking soda
1 cup hot water
1. Preheat oven to 200°C
2. Combine dry ingredients and mix
3. Combine wet ingredients, stir and add to dry ingredients. Gently mix until just combined.
4. Spoon into muffin tray.
5. Bake for approximately 10 minutes. You can test if muffins are ready by placing a clean, dry knife into muffin, if it comes out clean, without muffin mix, then muffins are cooked.
Add any of the following to the wet mix.
1 mashed banana
1/3 cup sultanas

Date Wholemeal Loaf:
1 ½ cups chopped pitted dates
½ cup sugar
2 tbs margarine
1 cup water
1 egg, lightly beaten
½ cup self-raising wholemeal flour
½ cup self-raising white flour
1 tsp baking powder
Place dates, sugar, margarine, and water in saucepan. Bring to the boil, then reduce heat and simmer for 2 minutes. If you would like to use the microwave, place the dates, sugar, margarine and water in covered glass bowl and microwave on high for 4 minutes. Remove from heat and cool.
Add the egg and mix well. Stir through sifted flours and baking powder, then place in a lightly greased 14 cm x 21cm loaf tin.

Date, Honey and Oat Slice
1 T honey
1 c rolled oats
1 c dates, chopped
1/2 c wholemeal flour, raw sugar, desiccated coconut
1/2 t baking powder

3/4 cup orange juice
125 grms butter
1 cup flour
1 cup wholemeal flour
1 tsp BP
1/2 tsp B Soda
6 Tblsp sugar
!/2 cup sultanas
Cut orange into quarters, put into processor with the juice until finely chopped, then add melted butter and egg, process for 5 to 10 seconds.
Mix with dry ingredients. Bake in greased muffin tins 180dC for 15-20mins.
Or, even better……Soften 3 ozs cream cheese and 2 Tblsp sugar. Put 2/3 muffin mixture into tins, one tsp cream cheese mixture, and top with more mixture. They freeze well and can be microwaved in one minute when needed#1735553BJB October 22, 2019 at 12:23 pm
WHOLEMEAL MINCEMEAT SLICES:
150g butter or quality margarine
75g soft brown sugar
225g plain wholemeal flour
110g porridge oats
Approx 225g mincemeat, about 1/2 a large jar
You’ll need a 11 x 7 inch shallow baking tin, butter well
Melt the butter and sugar in a pan,
Once melted allow to cool slightly, then add your oats and flour.
Stir and mix thoroughly.
Press half of this mixture firmly in the base of the tin, the firmer you press the better.
Spread your mincemeat on top of the base coat smooth with a spoon.
Pour on the top and gain level across the tin and press down firmly.
Bake in a pre heated oven at 200C for approx 20 minutes or the top is browned slightly.
Cut into desired pieces whilst still in the tin.

WHOLEMEAL KIWIFRUIT MUFFINS:
5 kiwifruit, peeled
1 banana, mashed
3/4 cup milk
75g butter, melted
1 egg, lightly beaten
1 cup self raising flour, sifted
3/4 cup wholemeal flour, sifted
1/4 cup caster sugar
1 tsp baking powder
1/4 tsp cinnamon
Apricot jam, warmed, to glaze
1. Preheat oven to 200°C (180°C fan-forced).
2. Grease a 12-hole muffin pan.
3. Cut 3 kiwifruit into 4 slices each. Coarsely chop remaining 2.
4. In a medium bowl, combine banana, milk, butter, egg and chopped kiwifruit (leaving the sliced kiwifruit aside).
5. In a large bowl, combine all of the dry ingredients. Make a well in the centre and add the wet ingredients, stirring gently with a fork until mixture is just combined.
6. Spoon mixture evenly into muffin pan and top each muffin with a slice of kiwifruit. Bake for 20 minutes then remove from the oven. Brush with the warmed apricot jam and bake for a further 5 minutes or until muffins spring back when touched. Cool on a wire rack.#1742935BJB February 17, 2020 at 12:28 pm
WEETBIX and DATE LOAF:
4 Weetbix, crushed
1/2 cup sugar
1 Tbsp. butter
1 cup dates, chopped
1 tsp. bicarbonate soda
1 cup boiling water
1 cup wholemeal self-raising flour
Preheat oven to 180°C. If using fan forced, 170 oC. Grease a loaf tin.
In a large bowl, place the Weetbix, sugar, butter, dates and bicarbonate soda. Pour in the boiling water, stir well and let sit for 5 minutes.
Add in the flour and the eggs, beating well.
Pour into the loaf pan and bake for 40-50 minutes or until cooked through.
