    Carrot Health Loaf:
    1 cup Rolled Oats
    ½ cup Carrot (grated)
    1 cup Wholemeal Flour
    1 Tablespoon Golden Syrup
    ½ teaspoon Baking powder
    ½ cup Hot Water
    ½ cup Milk
    Method:
    Mix dry ingredients and stir in grated carrot.

    Dissolve golden syrup in water, cool and add milk.

    Mix all together thoroughly.

    Bake in a loaf tin at 220°C for 45-50mins.

    Wholemeal Banana Bread:

    1/2 cup (125g) unsalted butter, melted
    3 ripe bananas, mashed
    1 tsp vanilla essence
    2 eggs, lightly beaten
    1 cup (200g) brown sugar
    2 cups (300g) wholemeal self-raising flour
    Method

    Preheat oven to 200å¡C (180å¡C fan-forced). Line a loaf pan with baking paper and set aside.
    In a bowl, mix the butter, mashed bananas, vanilla essence, eggs and brown sugar. Fold in flour until just combined.
    Bake for 40 minutes, or until a skewer comes out clean. Leave to cool in the pan for 10 minutes and then cool further on a wire rack.

    Cook time: 10 minutes
    Servings: 10 muffins
    Muffins:
    Dry Ingredients
    1 cup bran (wheat or oat)
    1 cup wholemeal flour
    1 teaspoon baking powder
    2 tablespoons milk powder
    1/4 cup brown sugar
    1/4 teaspoon mixed spice (cinnamon, nutmeg)

    Wet Ingredients
    1 tablespoon golden syrup
    1 teaspoon baking soda
    1 cup hot water

    Muffins:
    1. Preheat oven to 200°C
    2. Combine dry ingredients and mix
    3. Combine wet ingredients, stir and add to dry ingredients. Gently mix until just combined.
    4. Spoon into muffin tray.
    5. Bake for approximately 10 minutes. You can test if muffins are ready by placing a clean, dry knife into muffin, if it comes out clean, without muffin mix, then muffins are cooked.

    Variations
    Add any of the following to the wet mix.
    1 mashed banana
    1/3 cup sultanas
    1 medium grated apple

    Date Wholemeal Loaf:
    1 ½ cups chopped pitted dates
    ½ cup sugar
    2 tbs margarine
    1 cup water
    1 egg, lightly beaten
    ½ cup self-raising wholemeal flour
    ½ cup self-raising white flour
    1 tsp baking powder

    Method
    Place dates, sugar, margarine, and water in saucepan. Bring to the boil, then reduce heat and simmer for 2 minutes. If you would like to use the microwave, place the dates, sugar, margarine and water in covered glass bowl and microwave on high for 4 minutes. Remove from heat and cool.
    Add the egg and mix well. Stir through sifted flours and baking powder, then place in a lightly greased 14 cm x 21cm loaf tin.
    Bake in moderate

    Date, Honey and Oat Slice

    100g butter
    1 T honey
    1 c rolled oats
    1 c dates, chopped
    1/2 c wholemeal flour, raw sugar, desiccated coconut
    1/2 t baking powder

    Melt butter and honey together and add dry ingredients. Press into a greased 23cm tin and bake at 180C for 15 minutes. When cool ice with lemon icing.

    NGREDIENTS 3/4 cup Self Raising Flour wholemeal 1/4 cup Rolled Oats 1/4 cup Brown Sugar 1/4 cup Sultanas 1/2 tsp Cinnamon 1/2 cup Milk 1/4 cup Canola Oil 1 Egg lightly beaten METHOD Preheat oven to 190 degrees In a large bowl, combine flour, sugar, oats, sultanas and cinnamon. Add the milk, oil and egg. Gently mix until just combined. Spoon mixture into greased muffin tin and bake for 10-12 minutes or until lightly golden.

    WHOLEMEAL ROLLED OAT and SULTANA MUffins.

    Orange Muffins
    1 orange
    3/4 cup orange juice
    125 grms butter
    1 egg
    1 cup flour
    1 cup wholemeal flour
    1 tsp BP
    1/2 tsp B Soda
    6 Tblsp sugar
    !/2 cup sultanas

    Cut orange into quarters, put into processor with the juice until finely chopped, then add melted butter and egg, process for 5 to 10 seconds.
    Mix with dry ingredients. Bake in greased muffin tins 180dC for 15-20mins.
    Or, even better……Soften 3 ozs cream cheese and 2 Tblsp sugar. Put 2/3 muffin mixture into tins, one tsp cream cheese mixture, and top with more mixture. They freeze well and can be microwaved in one minute when needed

    WHOLEMEAL MINCEMEAT SLICES:
    150g butter or quality margarine
    75g soft brown sugar
    225g plain wholemeal flour
    110g porridge oats
    Approx 225g mincemeat, about 1/2 a large jar

    Method

    You’ll need a 11 x 7 inch shallow baking tin, butter well

    Melt the butter and sugar in a pan,
    Once melted allow to cool slightly, then add your oats and flour.
    Stir and mix thoroughly.
    Press half of this mixture firmly in the base of the tin, the firmer you press the better.
    Spread your mincemeat on top of the base coat smooth with a spoon.
    Pour on the top and gain level across the tin and press down firmly.
    Bake in a pre heated oven at 200C for approx 20 minutes or the top is browned slightly.
    Cut into desired pieces whilst still in the tin.
    Cool in the tin fully and serve sprinkled with icing sugar. Store in an airtight tin.

    WHOLEMEAL KIWIFRUIT MUFFINS:
    5 kiwifruit, peeled
    1 banana, mashed
    3/4 cup milk
    75g butter, melted
    1 egg, lightly beaten
    1 cup self raising flour, sifted
    3/4 cup wholemeal flour, sifted
    1/4 cup caster sugar
    1 tsp baking powder
    1/4 tsp cinnamon
    Apricot jam, warmed, to glaze
    Method
    1. Preheat oven to 200°C (180°C fan-forced).

    2. Grease a 12-hole muffin pan.

    3. Cut 3 kiwifruit into 4 slices each. Coarsely chop remaining 2.

    4. In a medium bowl, combine banana, milk, butter, egg and chopped kiwifruit (leaving the sliced kiwifruit aside).

    5. In a large bowl, combine all of the dry ingredients. Make a well in the centre and add the wet ingredients, stirring gently with a fork until mixture is just combined.

    6. Spoon mixture evenly into muffin pan and top each muffin with a slice of kiwifruit. Bake for 20 minutes then remove from the oven. Brush with the warmed apricot jam and bake for a further 5 minutes or until muffins spring back when touched. Cool on a wire rack.
