1 leek sliced in halved rinsed and chopped in slices (Half moons)
1 large potato cut into 1cm cubes
4 rashers bacon sliced
Dash of ricebran oil
8 Eggs – Beaten with S&P to taste.
I fry the leek, potato and bacon in the dash of oil till half cooked – then I have a square silicone baker I spread the mixture into. Pour over the egg mix.
Now this is what makes it extra special – sprinkle it with grated cheese and a mix of sunflower, pumpkin and sesame seeds. Bake for approx. 30 mins.#1729412BJB August 13, 2019 at 6:15 pm
Lazy Lemon Pie:
1 cup sugar
100g melted butter
1/2 cup plain flour
3/4 cup dessicated coconut
Zest of 2 lemons
2 – 3 lemons, juiced
1 cup milk
Preheat oven to 170°C. Place all the ingredients in a processor or bowl and blend together.
Pour the batter into a 23cm pie dish.
Bake for 45 minutes or until pie is turning dark golden on top and the filling is set.

CHICKEN AND VEGETABLE CRUMBLE
Recipe can be made 2 days ahead – suitable to freeze and suitable to microwave.
2 cups (360g) chopped cooked chicken
500g frozen mixed vegetables, thawed
1 x 440g can condensed cream of asparagus soup (or other soup of choice)
⅔ cup stale breadcrumbs
½ cup grated tasty cheese
2-3 tbsp chopped fresh parsley
Thaw the frozen vegetables and drain them to remove as much excess liquid as possible.
Combine the chicken, vegetables and soup in an 8 cup capacity ovenproof dish.
Mix the breadcrumbs, cheese and parsley in a bowl, then sprinkle the mixture over the chicken and vegetables.
Bake at 180ºC for about 40 minutes, or until the top is lightly browned and the crumble is heated through. :-))#1729628dr-whoMemberMember since: April 12, 2017

Scallop Potatoes with cream and chicken soup
Layer thinly slice potatoes and finely chopped onion… potatoes being the last layer. Mix together cream and a pack of cream of chicken soup (can add a little crack pepper, crushed garlic, whole grain mustard for more flavour) pour over potatoes and onions. I live alone so do not have to conmsider others tastes, so deep frozan small meals from the supermarket are just fine. A small tray of Watties Sweet & Sour Pork, half a cup of Peas & Sweet corn, cooked for 10 mins. in summer some coleslaw. Dessert is always fruit, an apple, persimon, nectarine,or other as prefered.No huge stomach with this diet and a fine variety of deep frozen meals available.If you are lucky, as I am, you will have a local bakery providing very nice take home meals. 3 large Chicken breast skinless
150 g butter
1 large onion
1 tsps garlic crushed
5 tbsp tomato paste
1/2 tsp nutmeg
1/2 tsp garam masala
1/2 tsp cumin
1/2 tsp ginger
1/2 tsp Chilli
1/2 tsp turmeric
500 ml Cream
salt and pepper
Easy Butter Chicken
Cut chicken into chunks
Mix nutmeg, cumin, ginger, chilli, turmeric, salt and pepper in a bowl
Add chicken and coat.
In a pan melt butter add onionand garlic saute.
Add chicken to the pan and cook till brown, then add tomato paste and garam masala.mix well.
Slowly add cream and mix in well.

Chicken and Pineapple Casserole
440g tin pineapple pieces
1 packet dried Crème of Chicken soup mix
2 tsp soy sauce
6 – 8 chicken pieces
Drain juice from pineapple, and make up to 1 cup with water. Mix in shaker with soup powder and soy sauce. Place chicken and pineapple pieces in casserole dish, and pour sauce over. Bake covered at 180° for 1-1 ½ hours. Turn chicken pieces halfway through cooking.
