1-2 Cups dry pasta such as macaroni elbows
Medium sized onion finely diced
3 Tablespoon butter
3 Tablespoon flour
Freshly ground black pepper
1 1/2 Cups milk
1 Cup grated cheddar (loosely packed)
185g Can Tuna – use flavoured if you wish
Put pasta on to cook until al-dente (approx 12 minutes).
While pasta is cooking sauté onion in butter.
Add flour and black pepper to onions then add milk and stir until a smooth sauce is obtained.
Remove from heat.
Stir in grated cheese.
Drain pasta and add cheese sauce to pasta.
Break up tuna into chunky pieces and carefully fold into pasta & cheese sauce.
Transfer into a baking dish with lid.
Bake for 15 minutes at 180ºC.
Remove lid and if desired sprinkle top with more grated cheese & breadcrumbs, return to oven for 10 minutes until the topping is crisp.#1723467BJB June 25, 2019 at 6:06 pm
Impossible – to – Fail – Quiche:
1/2 cup self-raising flour
1 cup aged cheddar grated cheese
1 tbsp oil
11/4 cups milk
1 onion, finely chopped
2 chopped rashers of shoulder bacon, rind removed
Place all the ingredients in a large bowl then whisk together, or combine in a large food processor bowl. Pour into a hot, greased quiche dish. Add extra pieces of bacon and anything else you think would work – a few tablespoons of chopped parsley, corn, raw mushrooms all work. Just clean out the fridge! Bake 180degC for 45 minutes. Rhubarb Crumble. ( with a difference )
2 cups flour
1 cup sugar
250g white chocolate buttons
Preheat oven to 150 degrees fan bak.
Cut rhubarb into bite size bits,place in pot with a little water and cook until soft,pour in baking dish.
Slice bananas in dish, rub flour, butter, and sugar together to make the crumble.
Put half the crumble on top sprinkle the chocolate buttons on top, put the rest of the crumble over the chocolate buttons.
Cook for 35 minute or to golden colour.

Kumara Bacon Salad
Let’s be honest… If something has bacon in it, it’s going to taste pretty dam good, right?!
✔4-5 red Sweetas Kumara (peeled and cubed)
✔3-4 rashers of bacon
✔Cherry tomatoes, quartered
✔1 red capsicum, finely sliced
✔70g goats feta, cubed
✔large handful of baby spinach, chopped
1) Toss the cubed kumara in a touch of olive oil with salt and pepper. Lay out on a baking tray lined with baking paper. Place in the oven 200C. Bake for 15 minutes.
2) After 15 minutes, lay the bacon rashers on top of the kumara, turn the oven up to 220C. Bake for another 15-20minutes until nice and golden.
3) Let the kumara and bacon, cool a bit; roughly chop the bacon up.
4) Add all the ingredients into a serving bowl, gently toss.

1 kg Boiled potatoes
Large knob of butter
Salt and pepper
200 g Strong grated cheese
1 Onion sliced
Oil and butter to fry
2 Tomatoes sliced
Heat the oil and butter in a pan . Add in the sliced onion. Cook gently until coloured
Mash the potatoes with a good knob of butter and plenty of salt and pepper
Stir through all but a handful of cheese
Add in the onions stir to mix well
Grease an ovenproof dish. To the cheesy potato mix into the dish . Sprinkle over the remaining cheese . Top with sliced tomato
Bake in a 200c oven for about 25 minutes until golden and crusty

Banana Bread and Butter Pudding” Serves 4:
3 medium bananas, peeled and sliced into 2cm rounds
3 Tbsp lemon juice
3 Tbsp marmalade
3 thick slices white bread, crusts removed
3-4 Tbsp butter, softened
1 1/2 cups milk
2 Tbsp sugar
1 tsp ground cinnamon
Toss the banana in the lemon juice to prevent discolouration. Place on the base of a 20cm x 17cm baking dish. Dot with the marmalade. Butter the bread and cut into 3 cm cubes. Place on top. Beat the eggs, milk and sugar and pour over the pudding. Allow to soak for 15 minutes. Dust with the cinnamon. Meanwhile, pre-heat the oven to 180oC. Easy Pizza Omelette
SERVES 2 20 MINS QUICK AND EASY,BREAKFAST,LUNCH
½ cup (125ml) Anchor Fresh Milk
1 teaspoon dried mixed herbs
Salt and pepper
1 tablespoon oil
½ cup chopped ham
½ cup Mainland Grated Mozzarella Cheese (can use cheddar
or Pizza plus)
1 tablespoon chopped parsley
1 tomato, sliced
Basil leaves to garnish
Break the eggs into a bowl and whisk lightly with the milk. Add the herbs and season with salt and pepper.
Heat a frying pan over a medium heat, add a film of oil and then pour in the eggs.
Cook for a minute before sprinkling over the ham and cheese, cover and cook until just set or place the pan under a hot grill.
Sprinkle with parsley, top with tomato slices and basil.

Sticky Sweet Sausage and Vegetable Bake: Serves 4 -6 Cooking Time 30 Mins:
6 pork sausages in casing1/4 cup, honey1/4 cup, soy sauce1/8 cup, hoisin sauce1 tablespoon, sesame seeds6 bok choy, quartered2 red bell peppers, deseeded and cut into large pieces2 zucchini, cut on a bias into 1/2 inch pieces1 large red onion, cubed2 tablespoon, canola oilSalt and pepper to tasteChopped green onions to garnish
Preheat oven to 450 degrees, and line a sheet pan with aluminum foil.
In a bowl, toss together Sausages, Honey, Soy Sauce, and Hoisin. Arrange Sausages on one side of the sheet pan.
Add Bok Choy, Bell Peppers, Zucchini, Onion to other side of sheet pan. Toss together with Salt and Pepper and Canola Oil, and arrange in one even layer.
Bake for 30 minutes, flipping the sausages and stirring the vegetables once or twice during baking to ensure all sides are browned.

Tomato and Ham Bake: Serves 4:
1 tbsp olive oil
20 grams butter
200 grams button mushrooms chopped
3 spring onions thinly sliced
4 large zucchinis
100 grams deli ham roughly chopped
200 grams feta
salt and pepper to serve
125 grams cherry tomatoes halved
Mixed salad greens to serve
Preheat oven to 200C. Grease a 7-cup capacity baking dish.
Heat oil and butter in a frying pan over high heat. Add mushrooms and cook, stirring often, for 8 minutes or until golden. Reduce heat to medium and add onions and capsicum. Cook for 4 minutes or until tender. Transfer to a bowl and cool
Using a vegetable peeler, run blade down length of zucchini forming ribbons. Line prepared baking dish over base and sides with zucchini, overlapping slightly. Place ham into base of dish over zucchini.
Whisk eggs and add vegetables and feta. Season with salt and pepper. Pour mixture into baking dish, spreading evenly. Place tomato halves over bake, cut side up. Bake for 40 minutes or until golden and set. Serve with salad greens.#1723852BJB June 29, 2019 at 4:31 pm
Pork and Apple Meatloaf:
500 grams pork mince
350 grams sausage meat
1 small onion, peeled finely diced
1 apple, peeled and grated
2 rashers bacon, diced
¼-½ cup currants
¼ cup crystallised ginger, finely chopped
½ cup freshly chopped parsley
4 tblsp tomato sauce
1 tblsp prepared mustard
1 cup fresh breadcrumbs
In a bowl mix together the pork mince, sausage meat, onion, apple, bacon, currants, ginger, parsley, tomato sauce and mustard. Season with salt and pepper and mix well.
Form into a long loaf shape and roll in the extra breadcrumbs. Place in an ovenproof lasagne style dish.
Bake at 180°C oven for 50-60 minutes or until a skewer inserted shows the juices run clear.
Allow the loaf to stand for 10 minutes before carving into thick slices.
