    Cheese

    Cheese muffins are quick and easy to make. I use this basic recipe a lot. You could add some precooked vegetables or fresh herbs, such as parsley or coriander, to the mix as well to make even tastier!

    Prep time: 15 minutes
    Cook time: 15 minutes
    Servings: 12 muffins
    Ingredients:
    1 egg
    1 cup milk
    50g melted butter

    2 cup flour
    2 teaspoons baking powder
    1/4 teaspoon salt
    pinch cayenne pepper
    1/2 cup grated cheese

    Directions:
    Beat egg and milk together. Add butter and mix well.

    Combine dry ingredients. Make a well in centre of dry mix and add liquid mix. Combine together quickly but don’t over mix.

    Pour mixture into greased muffin tins and bake at 200°C for 15 minutes.

    INGREDIENTS 3/4 cup Self Raising Flour wholemeal 1/4 cup Rolled Oats 1/4 cup Brown Sugar 1/4 cup Sultanas 1/2 tsp Cinnamon 1/2 cup Milk 1/4 cup Canola Oil 1 Egg lightly beaten METHOD Preheat oven to 190 degrees In a large bowl, combine flour, sugar, oats, sultanas and cinnamon. Add the milk, oil and egg. Gently mix until just combined. Spoon mixture into greased muffin tin and bake for 10-12 minutes or until lightly golden.

    Feijoa and Bran Muffins:
    2 cups wheat baking bran
    1 cup wholemeal flour
    1 cup flour
    3 tsp baking powder
    1 tsp Ground Cinnamon
    ½ cup soft brown sugar
    100g butter
    3 Tbsp golden syrup
    1 ¼ cup milk
    2 eggs
    1 ½ tsp baking soda
    1 ½ cup peeled and chopped ripe feijoas (about 4-5 feijoas)

    METHOD
    Preheat oven to 200°C (fan bake). Grease a deep 12 hole muffin tin.
    Put bran, wholemeal flour, flour, baking powder, Gregg’s Cinnamon and brown sugar into a mixing bowl and stir to mix.
    Melt the butter with the golden syrup.
    Whisk milk, eggs and baking soda until baking soda has dissolved.
    Make a well in the centre of the dry ingredients. Add milk mixture, melted butter and golden syrup along with the chopped feijoas. Carefully mix together to combine the ingredients, being careful not to overmix. Spoon mixture into prepared muffin tin. Bake for 15 – 20 minutes until the muffins are golden and spring back when lightly touched. Cool in the tin for 5 minutes before transferring to a cake rack to cool completely

    Apricot muffins

    30 g Butter, plus extra for greasing
    170 g Apricots, (Turkish or dried)
    250 g Boiling water
    250 g apricot nectar
    1 egg
    70 g sugar
    130 g Self Raising Flour
    130 g self raising wholemeal flour
    5min
    PREPARATION
    Preheat oven to 180°C. Grease a 12 hole muffin tray and set aside.
    Place apricots into mixing bowl and chop 10 sec/speed 5. Transfer into a bowl and cover with boiling water. Clean and dry mixing bowl.
    Place butter into mixing bowl and soften 1.5 min/50°C/speed 2.
    Add apricot nectar and mix 10 sec/speed 2.
    Add egg and mix 10 sec/speed 2.
    Add sugar and reserved drained soaked apricots and mix 5 sec/speed 2.
    Add self raising and wholemeal self raising flour and mix 10 sec/speed 3, using spatula to assist if necessary.
    Bake for 25-30 minutes (180°C) or until cooked. Serve warm.

    Fresh Orange muffins:
    1 orange, quartered and seeds removed (with peel)
    1⁄2 cup orange juice
    1 large egg
    1⁄2 cup butter or 1⁄2 cup margarine
    1 3⁄4 cups all-purpose flour
    3⁄4 cup white sugar
    1 teaspoon baking powder
    1 teaspoon baking soda
    DIRECTIONS
    Preheat oven to 400F; spray a muffin tin (12) with non-stick cooking spray like Pam and set aside.
    Put orange quarters in food processor (or blender) along with orange juice and process or blend until pureed.
    Add egg and butter to food processor and combine; pour into large bowl.
    Combine dry ingredients together in a separate bowl, then add all at once to orange mixture.
    Stir to combine.
    Fill muffin cups about 3/4 full.
    Bake in preheated oven for 20 minutes; remove from oven and let stand in tin for 5 minutes before removing muffins.

    I use this recipe but vary it to suit what I have on hand.

    Spiced sultana bran muffins.

    1 cup flour
    1 tsp baking powder
    1/2 tsp salt
    2 tsp mixed spice
    1 1/2 cups wheat bran
    1/4 cup sugar
    1 tsp baking soda
    1 cup milk (approx)
    1 Tbsp melted butter
    1 Tbsp golden syrup, melted
    1 egg, beaten
    1/2-1 cup sultanas
    Pre heat oven to 220c
    Combine all dry ingredients (except BSoda) in a bowl
    Dissolve Baking soda in milk, add egg, golden syrup and butter
    Pour liquid into dry and stir quickly until just combined
    Spoon into muffin tins and bake 12-15 mins, Makes 12
    I vary this recipe as follows:
    -Replace sultanas with mashed banana or grated apple
    -Use different spices eg cinnamon
    -Replace egg with a scoop of yoghurt
    -Leave out sugar if using banana or apple

    Pear and Ginger Muffins:
    2c Flour
    1 tsp Baking Powder
    1/2 tsp Baking Soda
    1/2 tsp Ground Ginger
    ¼ c Sugar
    1 Egg
    1 c Milk
    2 X 120g cans Wattie’s For Baby Pears
    50gr Melted Butter
    METHOD
    Sift flour, baking powder, baking soda and ground ginger into a bowl. Stir in sugar. Make a well in the centre.

    Beat together egg, Nurture Toddler Milk and Wattie’s Pears.

    Stir into dry ingredients alternately with melted butter.

    Divide mixture evenly between 12 greased muffin tins (or 24 mini muffin tins)

    Bake at 220 degrees C for 15-18 minutes or until well risen and cooked.

    Leave in tin for 5 minutes before turning onto a wire rack to cool.

    SAVOURY MUFFINS
    ​Makes 12

    Ingredients

    4 cups flour
    2 tablespoons baking powder
    Pinch salt
    ½ cup chunky ham, chopped
    2 handfuls baby spinach, chopped
    ¾ cup cheese, grated
    2 eggs
    1 cup oil
    1 ½ cups full milk
    ½ cup sweet chilli sauce
    1 cup Anathoth Farmstyle Pickle

    Method

    Place all dry ingredients in a large bowl and mix. Add the ham, cheese and spinach. In a separate bowl whisk the eggs, then add oil, milk, chilli sauce and pickle and stir well. Pour the wet mixture into the dry and combine all ingredients together. Be careful not to overmix, the more you mix the drier it becomes. If it seems dry add a little more milk. Bake in lined muffin papers at 180 degrees Celsius for 20 minutes or until skewer comes out clean.

    Spiced Apple Muffins:
    2 cups flour
    3½ teaspoons baking powder
    ½ teaspoon salt
    ½ cup sugar
    1 teaspoon cinnamon
    1 teaspoon nutmeg
    1 cup peeled, chopped apple
    1 egg, lightly beaten
    1 cup milk
    ⅓ cup melted butter, or canola oil
    Topping:
    2 tablespoons brown sugar
    ¼ teaspoon cinnamon
    ¼ teaspoon nutmeg
    Instructions
    Preheat oven to 400 degrees F.
    In a large bowl combine flour, baking powder, salt, sugar, and spices. Stir in the apple.
    Combine egg, milk, and melted butter. Add to dry ingredients, stirring until just moistened.
    Spoon into muffin tins that have been greased or lined with paper muffin cups.
    Combine topping ingredients and sprinkle over muffins.
    Bake for 15 to 20 minutes.
