    LINDA’S RHUBARB BREAD
    1 1/2 c. brown sugar
    2/3 c. salad oil
    1 egg
    1 c. buttermilk
    2 1/2 c. flour
    1 1/2 c. diced rhubarb
    1/2 c. nuts
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. vanilla
    Mix ingredients and put into 2 greased loaf pans and sprinkle a mixture of 1/2 cup brown sugar and 1 tablespoon butter on top of loaves. Bake at 325 degrees for 1 hour.

    KUMERA and DATE LOAF:

    1½ cups cooked, mashed kūmara
    2 eggs
    ½ cup canola oil
    ½ cup plain yoghurt
    1 tsp vanilla extract
    ½ cup chopped dates
    1¾ cups wholemeal flour
    ½ cup brown sugar
    2 tsp baking soda
    1 Tbsp mixed spice

    Method
    Preheat oven to 180°C.
    Grease and line one loaf tin with baking paper.
    Add the eggs, oil, yoghurt and vanilla to the kūmara, and mix until combined.
    Mix in the dates.
    In a large mixing bowl, combine the flour, sugar, baking soda and mixed spice.
    Add the wet ingredients into the dry and mix to combine.
    Pour the batter into the loaf tin.
    Bake in preheated oven for approximately 40-45 minutes or until cooked through and a dark golden brown.

    BROWN BANANA BREAD
    100 gm butter
    ¾ C sugar
    1 egg
    1 C mashed ripe banana
    1 C wholemeal flour
    ¼ C orange juice
    ¼ – ½ C chopped walnuts/sunflower seeds
    1 C plain flour
    1t B.P
    1t B. Soda
    Cream butter and sugar till light and fluffy. Add egg and beat. Add mash bananas, wholemeal flour, OJ, nuts/seeds. Stir till just combined. Sift in plain flour, BP and B. Soda. Mix all till just combined. Line a 23 x 10cm loaf tin with greaseproof (bottom and long sides) and spoon in the mix. Bake at 180*C for 1 hr till skewer comes out clean. Stand for 5-10 mins then turn out.

    1½ cups self-raising flour
    1 teaspoon ground ginger
    50 grams butter, diced
    ½ cup brown sugar
    ½ cup chopped dried figs
    ½ cup milk
    ¼ cup orange marmalade
    1 egg, lightly beaten
    2 tablespoons glace peel, optional

    MARMALADE and FIG TEA LOAF:
    Method
    Preheat the oven to 170ºC. Grease and line the base of a large 21cm x 11cm loaf tin.
    Sift the flour and ginger into a medium-sized bowl and rub in the butter until the mixture resembles fine breadcrumbs. Stir in the sugar and figs.
    In a separate jug or bowl, mix together the milk, marmalade and egg. Stir into the dry ingredients and mix gently with a slotted spoon to form a soft batter.
    Turn the mixture into the prepared loaf tin, level the surface with a spatula and scatter over the mixed peel, if using.
    Bake in the preheated oven for 50-55 minutes until golden brown and skewer inserted in the centres comes out clean.

    Wonder Loaf

    2 cups water
    1Tb butter
    1+1/2 cups sugar
    2 cups fruit
    1 tsp mixed spice
    Boil all for 10minutes. When cool add 3 cups flour and 1dsp B. Soda. Mod oven. Cover top with brown paper last 15-20 of cooking to prevent burning. makes a good big loaf

    EASY FIVE CUP LOAF:
    1 cup self-raising flour
    1 cup brown sugar
    1 cup dessicated coconut
    1 cup sultanas
    1 cup milk
    Method
    1
    Pre-heat oven to 180°C. Line a loaf tin with baking paper and set aside.

    Mix all ingredients in a bowl.

    Pour into lined tin.

    Bake for 40-45 mins until cake springs back when lightly

    WEETBIX and DATE LOAF:
    4 Weetbix, crushed
    1/2 cup sugar
    1 Tbsp. butter
    1 cup dates, chopped
    1 tsp. bicarbonate soda
    1 cup boiling water
    1 cup wholemeal self-raising flour
    2 eggs
    INSTRUCTIONS
    Preheat oven to 180°C. 170 if Fan baked. Grease a loaf tin.
    In a large bowl, place the Weetbix, sugar, butter, dates and bicarbonate soda. Pour in the boiling water, stir well and let sit for 5 minutes.
    Add in the flour and the eggs, beating well.
    Pour into the loaf pan and bake for 40-50 minutes or until cooked through.

    EASY FRUIT LOAF no2:
    1 cup rolled oats
    1 cup sultanas
    1 cup brown sugar
    1 cup self-raising flour
    1 cup milk
    Method
    Preheat oven to 160-170C.
    Mix together dry ingredients. Make well in centre and add milk.
    Mix well and pour into line loaf tin.
    Bake 160/170 45 mins to 1 hour.

    1 cup peeled & chopped feijoas
    1 cup boiled water
    1 cup White Sugar
    50g butter
    1 egg
    1 tsp baking soda
    2 cups self raising flour or,
    2 cups plain flour & 2 tsp baking powder

    FEIJOA LOAF.

    Method
    Place feijoas, boiling water, White Sugar and butter into a pot. Simmer for 5 minutes, cool slightly, then beat in your egg, flour, and baking soda.

    Pour into a loaf tin & bake in a preheated oven at 180°C for 45-50 minutes.
    Could replace 1 cup of white flour, for 1 cup of Wholemeal Flour, if liked!

    FEIJOAS, will soon be ready. 🙂
