    There must be heaps of recipes out there for Lemons, oranges etc. Plesae share your favourite(s), for everyone to enjoy.

    Lazy Lemon Pie:

    If you don’t have time to make Lemon Delicious but want a fast easy pie, try this:

    1 cup sugar, 100 grams melted butter, 1/2 cup plain flour, 3/4 cup coconut, zest of 2 lemons, 1/3 cup lemon juice, 1 cup milk.

    Place all ingredients on a processor or bowl and blend together.
    Pour the batter into a greased 23 cm pie dish. Bake @ 170 oC for 45 mins. or untill pie is turning golden brown on top and the filling is set.

    Lemon Bars:

    2 1/4 cups plain flour, divided. 1/2 cup Icing sugar, plus 1 Tblspn icing sugar. 1 cup butter. 4 eggs. 2 cups sugar. 2/3 cup lemon juice. 1/2 tspn baking powder.

    In a large bowl, combine the 2 cups flour, 1/2 cup icing sugar, cut in the butter untill crumbly. Press mixture into ungreased 13 inc x 9 inc baking dish. Bake at 180 oC for 12-15 mins,or untill lightly brown. Place on wire rack to cool
    Meanwhile in a small bowl, beat the eggs, 2 cups sugar,, lemon juice and remaining flour untill frothy. Pour over warm crust. Bake for 18-20 mis or untill lightly brown . Cool and then dust with the 1 Tblspn Iciing sugar, cut into bars.

    This is a good dessert when you’ve had a substantial first course:

    LEMON DELICIOUS

    50 g butter, 3/4 cup sugar, 2 tsp grated lemon rind, 3 tabsp flour, 2 eggs, 1 cup milk, 1/4 cup lemon juice.

    Cream butter and sugar. Mix in grated lemon rind and flour.
    Separate the eggs. Beat whites until soft peaks form.
    Beat yolks until fluffly. Add the milk.
    Stir egg yolks and milk into sugar mixture; stir in lemon juice.
    Fold in beaten egg whites.
    Pour into greased oven dish (3to5 cup capacity).
    **Stand in larger dish of water. (I don’t..)
    Bake at 180 degrees C about an hour or until lightly browned on top.

    Serve hot with cream.
    Serves 4-6.

    (this is like a self saucing pudding as there is a lemony syrup on the bottom of the pudding when cooked)

    Lemon Rissotto:

    1 Tblspn olive oil, 1 small onion or shallot peeled and finely chopped, 2 cloves finely chopped, 1 cup arborio rice, 1/4 cup dry white wine, 3 cups homemade chicken stock, 1/2 tspn salt, zest and juice of 1 lemon, 1/2 cup freshly grated parmesan, 30 g butter.

    Heat stock to a simmer, meanwhile in a large pan over medium heat cook the oil onion and garlic 5 mins untill softened but not brown. Add rice and stir untill liquid evaporates.
    Add salt and start adding stock 1/2 cup at a time, stirring constantly untill each addition is almost absorbed. This should take 20 mins and at the end the rice should ve just tender and most liquid gone. Take off heat and stir in zest, juice, parmesan and butter, leave to settle for 5 mins.
    May need more liquid, add a little boiling water.

    Lemon Yogurt Muffins. Makes 12

    2 cups flour, 2 tspns baking Powder, 1/4 cup sugar, 50 grams butter, 2 eggs, 1 tspn grated lemon rind, 1/4 cup lemon juice, 1 cup natural unsweetend yoghurt.

    Sift flour and baking powder into a bowl. Mix in sugar. Make a well in the centre of dry ingreds., Melt butter. Beat eggs, lemon rind and juice and yogurt together untill combined. Pour butter and egg mixture into dry ingredients and mix untill just combined. 3/4 full greased muffin tins. bake @ 200 oC for 15 mins or untill they spring back.

    Lemon Coriander Chicken ( or Fish ) Serves 4:

    4 Chicken breasts, boned, skin on OR equivalent white fish fillets. 2 lemons zest and juice, 1/2 cup coriander roughly chopped, 2 cloves garlic, 2 Tblspns white wine, 2 Tblspns olive oil, salt and pepper, 5 spring onions thinly sliced.

    Grate zest and mix with juice, coriander, garlic, win, oil, s and p. Coat chicken/fish. Grill ( over foil lined tray ), basting often.

    Lemon Coconut Slice:

    1 cup flour, 2 tspn baking powder, 1/2 cup brown sugar, 1/2 cup melted butter.

    Mix dry ingred, add butter ‘ press firmly in sponge roll tin and Bake 180 oC for 15 mins untill golden brown.
    Ice when cold with Lemon icing using both rind and juice of 1 lemon.

    Comment: For a change, you could use orange or passionfruit icing. 🙂

    Lemon Slice. ( this is also another thread ( slices )

    1 1/2 cup flour, 1/2 sugar, 1 egg, 125 gram butter, 1 egg, Juice of 1 lemon, 1 heaped tspn baking powder, 1/2 pkt glace peel, 1 tspn vanilla ess.

    Cream butter and sugar, add egg vanilla, juice and peel, mix well.
    Add sifted flour and baking powder, mix well. Press lightly into lined with Baking Paper sponge roll tin. Bake @ 180 oC 5-18 mins untill light brown & springs back.

    Ice when cool with Lemon Icing: 1 cup icing sugar, 1 Tblspn lemon juice, 1 tspn butter, a little hot water. Mix all together untill quite runny, spread over slice.

    Orange Juice Dessert: Serves 4

    4 oranges, 5 level Tblspns cornflour, 60 gr butter.

    Melt the butter in a saucepan. Add the cornflour and stir with a wooden spoon. Cook over a medium heat adding the orange juice slowly, Stir untill thick and pour into 4 ramkins.

    Comment: If liken a little less thick, use only 4 Tblspns cornflour.
