    Apple Quickie

Friend asked for a good quick dessert to make for the elderly residents. No problem, this recipe is committed to memory and the residents loved ‘The Rip, Shit and Bust Cake.’ Great as a dessert, cake, and even better next day with coffee.
    4ozs butter, 4ozs sugar, 1 egg, 1cup flour, 1 teas Baking Powder, 2 apples,sliced.
Melt butter and sugar. Add egg, mix. Stir in flour and BP. Spread 3/4 mixture in a 20cm/8in round tin. Lay slices of Apple over and sprinkle with 1Tbs brown sugar and 1 teas cinnamon mixed together. I often add a few chopped up walnuts and zest of lemon as well.
Put teaspoon lots of remaining dough mixture over top.
Bake moderate oven for 45-50 minutes.
    Yum yum.

    Milk chicken (intense flavours)

Brown all sides of  a whole  chicken then  place in a tagine with fresh sage, cloves of garlic, lemon zest and milk up to approx 2 cm deep.

Cover and place in oven at 180 deg Celsius for 1 hr, then uncover for the final 30 mins.

    So delicious 😊

Here is my most loved Steam Pudding Recipe. What I love most it all goes in one bowl, the steam pudding basin and you just steam for one hour.

1/4 cup Sugar 1 egg 2 tblsp Melted Butter
1/2 cup Milk 1 cup flour 1 tsp cream of tartar
1/2 tsp Baking Soda Optional Flavours to add: 2 Tblsp Golden Syrup
    Cocoa 1 Cinnamon & Dates
My favourite is Cocoa and Golden Syrup combination.

Beat together sugar and egg, add melted butter, combine together with warm milk Baking soda and Golden syrup and alternatively sifted dry ingredients. steam for one hour.
