Mini Beef Wellingtons

Beef wellington is a Sunday-lunch favourite in our house. I love to get creative with the pastry, but you can also keep it simple. You don’t even need to use beef, you can also use chicken, pork or even cauliflower.

One-Pan Rice & Veggie Dinner
