Scalloped potatoes 

As autumn draws in I find myself going towards hearting comforting food and this recipe brings me right back to family dinners. I’m sure many people will remember this recipe from growing up and when making it for your own wee ones.

It’s such a versatile recipe, where you can easily make more or less. Plus add any extra flavour you like from chives, bacon, pancetta, sun dried tomatoes, garlic the list is endless.

Ingredients:

  • 4 medium potatoes, peeled and thinly sliced
  • 1 small onion, finely diced
  • 1 cup grated cheese
  • salt and pepper to taste
  • 1 cup milk

Method:

Preheat oven to 180°C.

Place a layer of potatoes in a 20cm baking dish. Sprinkle with some onion, cheese and salt and pepper to taste. Repeat until all the ingredients are used, ending with a layer of cheese. Pour milk over potato mixture.

Cover with tinfoil and cook for around 30 – 40min. Remove tinfoil and continue cooking for another 10-15 min or until potatoes are cooked.
