With the whitebait season underway you have until November 30 to whip up some fresh fritters, unless you live on the West Coast of the South Island, where you have until November 14.
Ingredients
1 tbsp flour
2 eggs
240g fresh whitebait drained and rinsed
salt and ground black pepper to taste
1 teaspoon of fresh parsley
3 teaspoons butter to cook in
Method
Whisk eggs, add sieved flour, salt, pepper and herbs. Gently stir in whitebait.
Melt butter in frypan then drop in teaspoon fulls of fritter mix.
Fry until set then flip and brown the other side.
Best served with beer, bread and butter, and a squeeze of lemon.
