Peel and thinly slice 3 large potatoes
Grate 1 cup cheese
Wash and finely chop 4-6 leaves of fresh silverbeet or spinach
Cover bottom of a small greased oven dish with half the scalloped potato.
Add the freshly chopped spinach and sprinkle with ¾ of the grated cheese.
Top with rest of the scalloped potatoes and loosely sprinkle last bits of cheese.
Season as required.
Bake in hot oven for approx 30 minutes, or until potatoes look browned and crisp on top.
Serves one or two. It stands alone as a vegetarian meal, but can be served also with meat or fish. The bake has all components for balanced meal…carbohydrates, protein and goodness of vitamins/iron etc in greens. Nice also with salad.
