Never Fail Microwave Coffee/Chocolate Cake

125grms butter, 1 1/2 cups sugar, 2 tablespoons coffee/cocoa, 1/2 teaspoon baking soda, 1 cup hot water, 1 1/2 cups s.r. flour, 1/4 teaspoon salt, 2 eggs

Place butter, sugar, coffee/cocoa, baking soda and water in a microwave safe bowl, stir and cook on high for 4 mins, stirring after 2 mins and again at the end. Stand for 8 mins to cool. Sift flour and salt together. Beat eggs well. Add eggs to cooled mixture. Add flour all at once and beat until smooth.

One large or 2 small microwave containers.

Large takes 5 minutes on high or until risen and sticky to the touch. Stand covered for 15 mins.

Ice as required.

Note: I find the chocolate version is great with choc butter icing with a drop of peppermint essence added.
