I1/2 cup grated carrot
I small chopped onion
I1/2 cup finely shredded greens (Cabbage, baby silverbeet maybe)
3/4 cup of crumbled Feta cheese
Pinch of sweet basil
2 large beaten eggs
Salt and pepper to taste.
Combine all the ingredients and fill into muffin pans lined with greasproof paper. Or use cup cake cups ( they stick a bit)
Bake for 30 mins at 200, Makes about 6.
You can also line the pans with blanched cabbage leaves, very tasty.
