2 X 100 gms unsalted butter
I packet of gingernut biscuits
!/2 a pineapple
1/2 cup coconut milk
180g bar of white chocolate.
Break the gingernuts down to fine crumbs. Mix in 100gms melted butter.
Grease a 27cm loose bottom flan tin and press the crumbs in to make the crust. Put in the fridge until set. Make a cuppa and put your feet up.lol.
When the crust is solid it's time for the filling. Melt the remaining 100gms of butter with the coconut milk and bring to the boil. Take the pan off the heat and add the white chocolate, all of it, don't sneak a bit for yourself. lol. Blend it all together and pour onto the flan base and return to the fridge to set.
Cut the skin from the pinapple then cut the fruit in half lengthways and remove the core. Slice the pineapple in long thin wedges and set aside to drain. Don't want the top of your flan swimming in juice, do you? When the filling is set arrange the pineapple like a sunflower on the top. If you like you can also add some shaved coconut.
You can use any fruit, but this is quite sweet and the sharpness of the pineapple counteracts the sweetness.
