Deluxe Chocolate Brownie

125g Butter
185g Dark Chocolate, chopped
1 Cup Caster Sugar
2 eggs
1 Cup Plain Flour
1/2 Cup chopped pecans/ or white chocolate
2 tsps Vanilla essence

Melt butter and chocolate in microwave on Med/High for 2 minutes. Stir in sugar and vanilla. Add lightly beaten eggs one at a time, then sifted flour and pecans. Pour into a greased and base-lined 20cm square tin and bake in a moderate oven for 30 minutes, cool in tin. When cold turn out and ice with Chocolate cream icing and allow to set. Cut into squares and serve.

Chocolate-Cream: Melt 100g dark chocolate in Microwave on Med/High for 1 1/2 minutes. Add 1/4 cup of sour cream, stir, then micorwave on Med/High for 30 seconds and stir till combined. Spread on top and leave to set.

To freeze: In airtight container up to 2 months. Thaw at room temperature.
To Microwave: Med/High for 8 minutes in 20cm round dish.
