This dish is fantastic not only because it tastes so good but requires little effort.
The other great thing about it is that you put together your lettuce parcels as you eat, so it is an activity as much as a meal, which can involve friends and family.
Dish Time: 20 mins
Serves: 2
Tip: If you like it hot? Chop and add half a red chilli (without seeds)
Ingredients:
• 2 tablespoons peanut oil
• 1 onion
• 2 cloves garlic
• 1 celery stick
• ½ red pepper
• ½ green pepper
• 1 large carrot, grated
• 500g beef mince (could use pork)
• 4 tablespoons soy sauce
• 4 tablespoons sweet chilli sauce
• 2 tablespoons crunchy peanut butter
• Handful chopped coriander
• 1 iceberg lettuce
Garnish:
• Chopped coriander
• Lemon wedges
Method:
• Finely dice onion, garlic, celery and peppers
• Using a wok, heat peanut oil on a medium heat
• Cook onion, garlic, celery and peppers until soft then remove from wok
• Turn up heat and brown beef mince
• Turn wok down to medium heat
• Add back to the wok the cooked onion, garlic, celery and peppers
• Mix through grated carrot
• Stir in soy sauce, sweet chilli sauce and peanut butter, mix until peanut butter has melted
• Turn off heat and mix through coriander
Serve:
• Serve satay beef in bowls with a lemon wedge and extra coriander on top
• Accompany beef with individual lettuce leaves
• Place as much beef as desired in lettuce leaf, squeeze on lemon juice, and roll lettuce leaf to eat.

• Peanut oil
• 1 onion
• 2 garlic cloves
• 1 red pepper
• 1 green pepper
• 1 stick celery (may need to buy half celery)
• 1 large carrot
• Coriander
• 1 lemon
• 1 iceberg lettuce
• 500g beef mince (could use pork mince)
• Soy sauce
• Sweet chilli sauce
• Crunchy peanut butter
