Ingredients:
• 2 x asian eggplants
• 3 tablespoons flour
• Olive oil
• Salt
• 2 x lemon wedges
• Mixed leaf lettuce
Method
• Slice eggplant into discs
• Dip slices in flour to lightly cover both sides (dust off any excess).
• Cover base of pan and heat oil over high heat
• Fry eggplant until golden on each side
• Remove from pan place on paper towel and sprinkle over rock salt
• Serve straight on to bed of mixed leaf lettuce with wedge of lemon.
• Squeezing lemon juice over eggplant is highly recommended!
