Emelle - this sounds so easy and am sure will taste nice. Always looking for something quick and easy. Wonder how it would go if mixed in food processor? Will try it soon.

I will try it too-I often keep some mashed potato in fridge as base for savoury on toast.I will put a little butter in too I think.

There was some discussion on another thread about Aunt Daisy,in connection with her potato bread.
I have M in Law's Aunt Daisy cookbook here-no cover,and brown pages with spattered remains of long ago cakes.
Here is her recipe for potato pastry:
1 large cup of mashed potato
1 small cup flour
half teaspoon baking powder
a little salt.
work the flour into potato using no liquid.
Roll out and cut into squares.cover with cooked mince meat with onions.fold over and pinch edges together.
she then goes on to say to roll in flour and fry till golden,but these days baking in hot oven would be healthier.
