Cut Glass Desert. Serves 10.

3 set jellies, red, lime and orange, using 1/2 quanity of water - cut into cubes.
1 lemon jelly
1/2 cup water
1 cup pineapple, chopped or crushed
300 mls cream approx
1/2 tspn vanilla paste ( ess will do )
1pkt digestive biscuits crushed with 125 g melted butter.

Mix melted butter and add to biscutes and spread out into tin or large pie plate and set aside.

Heat lemon jelly with 1/2 cup water untill crystals dissolved, cool, add pineapple. Whip cream. add vanilla, stir in syrupy jelly. Then add add jellycubes. Pile onto biscuit base. Set overnight.

Christmas Mazurka:

125 grams each of: currants, sultanas, raisins, dates, almonds.
60 grams each of: cherries and glaced pineapple.
3 eggs, 1/2 cup honey, 1 large cup plain flour.

Chop fruit to uniform size and toss in flour to coat. Mix together eggs, honey and mix into dry ingredients. Press this into slab tin, lined with Baking paper, and bake in a slow oven, 35-40 minutes.

Last Minute Pineapple Christmas Cake:

150 grams Butter, 1 cup Brown sugar, 440 gram Crushed Pineapple, 500 gram Mixed Dried Fruit, 2 Tblspns Rum, 2 Large Eggs lightly beaten, 1 cup Flour, 1 cup SR Flour, 1/2 tspn Baking Soda, 1 tspn Mixed Spice, 1 tspn Cinnamon.

Place butter, sugar, pineapple and juice in a saucepan, then stir untill butter melts and sugar dissolves. Stir in dried fruit and simmer gently for 3 minutes. Remove from heat and cool.
Stir in beaten eggs and Rum. Then stir in the flours, baking soda and spices, sifted together. Spoon into prepared tcake tin. A 20 cm double lined tin, with baking paper. Bake @ 150 oC for 1 1/2 hours or untill a skewer inserted comes out clean. Ice if wished.

Easiest Cheesecake filling ever (Yummy)

1 x 250g pottle cream cheese
1 small bottle cream
1 packet jelly crystals (your choice of flavour)

Combine cream cheese and cream and beat until smooth, add jelly CRYSTALS. Beat until crystals are dissolved and pour into prepared base amd allow to set.

Note: A packet of jelly crystals gives you the sugar, the gelatine and the flavour all in one and in the right proportions and also saves a lot of messing about.

Fruit Mince Biscutes:

250 g butter, 1 1/2 cups white sugar, 1/2 tspn van ess., 3 eggs, 3 1/4 cups plain flour, 1 tspn B Soda, 1 cup chopped walnuts, 1 1/2 cups fruit mince.

Pre heat oven to 180 oC.
Cream the butter and sugar together, then add the eggs and van ess. Sift the flour and B Soda and add to the butter mixture. Mix untill well blended. Stir in the nuts abd fruit mince and mix well. Drop by tspn full on baking tray lined with baking paper. Bake 8-10 mins untill light brown.

Christmas Cheesecake: Serves 8.

Base: 2 cups ( 220gr ) biscuit crumbs, 125 g melted butter, 1/4 tspn nutmeg, 1/4 tspn cinnamon.
Filling: 500g creamed cheese, 3/4 cup sugar, 3 eggs, 200g mixed dried fruit, 1 Tblspn dark Rum.

Mix all the base ingredients together and press into a greased springform tin them place in fridge for 30 mins.
Preheat oven to 160 oC. In a large bowl, beat cream cheese and sugar till smooth and creamy, add eggs, one at a time. Mixing well after each. Stir in dried fruit and the rum. Pour over prepared base.
Bake in preheated oven for 1 hour or till firm. Cool in oven with the door ajar. once cooled, plae in fridge and cool overnight. Decorate with whipped cream and chocolate curls.
